AI coordinator handles e-signing is who prepares the packet. On, the coordinator picks the form, fills the blanks from the closing, and adds the signers. Off, you do that.

AI coordinator sends requests itself is who presses Send. It starts off. Leave it off and you review the packet, then send it. Turn it on and the AI coordinator sends it without anyone on the team checking first.
